Ingredients
- 1 clove of garlic
- half and inch fresh ginger
- 2 teaspoons turmeric
- 2 tablespoons sesame seeds
- 2 fillets of chicken
- mixed salad & herb leaves : lettuce, rocket, spinach, parsley etc
- 1 carrot
- 1 sml courgette
- sml red pepper
- 30mls olive oil, 10mls lemon/lime juice, salt & pepper
Method
- Grate the carrot and courgette and add to the washed & dried mixed leaves.
- Thinly slice the pepper, add to the other veg along with the olive oil and freshly squeezed juice, mix well.
- Cut the chicken into bite size portions and place in a bowl, add crushed garlic, grated ginger, turmeric, sesame seeds, salt & pepper and mix evenly.
- Heat some oil in a wok or frying pan, add the chicken to this and cook turning constantly on a relatively high heat (3) for about 10mins. To check if it's done cut the largest piece in half and if there is no pink colour it's done.
- Serve with the warm chicken on top of the leaves and with crusty bread, baked potato or rice.
